Plans changed at the last minute, because of a still-frozen turkey.
So, I volunteered to make lasagne. Quite bold, seeing as I’ve not made lasagne before. While chatting with family down in NC, I learned that my sister was also baking lasagne for the family. Coincidence?
I went for a short run. After showering, I decided to go all-out and started by making a homemade sausage-green pepper tomato sauce (also a first, and improvised). Then built the lasagne and baked it. Baked some fresh garlic bread, and the two of us sat down for our own special Christmas Eve dinner.
(The lasagne was pretty good, even if I do say so myself.)

The fact that you managed to squeeze in a short run in the midst of it all, makes it even more sweet!
Last year we had a similar situation and my sweetie ended up improvising a Christmas roast. I told him it was so yummy that we would have to make it our annual holiday tradition! Initially, he was hesitant, but he made it (or a version of it) again yesterday and it was scrumptious!
I LOVE when things like that evolve naturally. Not only do we enjoy and learn from them, but they can even become family traditions! Who says you need to eat Turkey on Christmas Eve?! Perhaps Ray’s Lasagne will become a secret recipe for your great-great grandchildren to whisper about on Christmas Eve’s to come!
We started a second tradition this year on the eve of the holiday and had Swedish meatballs, mashed potatoes, and Lingnonberry! Yum!

We’ve already laughed at the possibility of lasagne being our new tradition! It is wonderfully sweet to open up and find the possibility in each moment, and to use each challenge as the catalyst for a new adventure!
